目的 通过对一起食物中毒现场调查分析,查找致病原因和根源,提出防控措施。方法 对此起食物中毒的发生单位和发病患者进行现场流行病调查、食品卫生学调查,结合患者临床表现、治疗效果和实验室检测结果,对统计数据进行整理分析。结果 该起食物中毒的当日就餐人数164人中有52人发病(罹患率31.71%),发病时间集中,潜伏期短,呈单峰曲线,为一次性暴发;根据临床表现、流行病学调查、食品卫生学调查、实验室检测和和治疗诊断,判定为:致病性大肠埃希菌污染凉拌菜导致的“细菌性食物中毒”。结论 该起食物中毒是由于致病性大肠埃希氏菌污染凉拌菜鸡胗所致,各部队必须严格遵守《武警部队卫生监督实施办法》,加强对从业人员的健康检查,重视卫生监督员队伍的建设,建立经常性卫生监督长效机制,加强食品安全常识宣传教育,防止类似事件再次发生。
Abstract
Objective To find the cause of one case of food poisoning and propose prevention and control measures.Methods The occurrence of food poisoning in a unit of the Armed Police Force and the onset of patients were investigated in terms of epidemiology and food hygiene in combination with the features of these cases, therapeutic effect and laboratory test results.The data was statistically analyzed.Results The number of people who were food poisoned was 52 out of a total of 164(31.71%)who ate in the same cafeteria that day. The onset time was similar, and the incubation period was short with a single peak curve,which pointed to a single outbreak.According to the epidemiological investigation, case characteristics, food hygiene investigation ,laboratory examination, and treatment and diagnosis, it was determined that the “bacterial food poisoning” was caused by a dish contaminated with pathogenic escherichia coli.Conclusions Since the food poisoning was caused by chicken gizzards contaminated with pathogenic escherichia coli, rigorous hygienic supervision has to be enforced in the troops, the health examination of employees has to be improved, a long-term regular health supervision mechanism has to be established, knowledge of food safety has to be made more accessible to prevent such incidents.
